Spumante DOC Etna

 

Nerello Mascalese grapes grown at high altitude on top of the Volcano revealed themselves as an ideal basis to make spumante wines with classical method.

Sosta Tre Santi Etna DOC Brut Bianco is the result of a long and accurate production process with classical method. At least 30 months of refinement on yeasts in bottle are necessary to make a spumante wine able to authentically represent the unique characteristics of Nerello and of the local Etna territory.

Vinification

Carefully selected grapes are hand-picked when company technicians identify the right moment to obtain the basis for spumante wines, which need a high level in total acidity and a low level of sugar. Collected grapes, following wine-making process in white, are softly pressed and only the first pressing is devoted to this product, with consequent yields of 50-60%.

Fermentation lasts 3 weeks at controlled temperature. The wine is refined in stainless steel pools up to the following spring, when it is put in bottle with yeasts and activators to start the second fermentation.

Refinement

It rests at least 30 months on yeasts and fine lees; then remuage, disgorgement, levelling and packing. Next, it is left to refine in bottle for at least 6 more months before it is gets to the market.

When tasted, it stands out for a strong mineral taste and an excellent acid shoulder. Overall harmonic and persistent.

Abbinamenti

On the table it matches perfectly with risotto dishes stirred with parmesan cheese, crustaceans, molluscs (even au gratin), dried salted cod fritters, dishes based on fat fish, like grouper. Excellent even out of main meals or as aperitif, accompanying mixed fried food, salmon canapés, tasty cheese or mortadella.
